I want to make cornbread that tastes like the one served at Montana's restaurant.

My cornbread recipe always tastes good, but theirs' is really good...LOL!! It's spongier inside and light (holey!!) and tastes sweeter with more of a sponge cake consistency. MIne is more like a muffin or pound cake consistency.

Here's my recipe....what should I do to it to change the consistency?

2 Cups yellow cornmeal
2 Cups all-purpose flour
1/4 cup sugar
1/8 cup baking powder
1 tsp. salt
1/2 Cup shortening
1 Cup milk
1 egg

Mix all ingredients together (batter will be slightly lumpy). Pour into greased 8 X 8 pan or muffin cups or loaf pan. Bake until golden brown 20-25 mins.

P.S. already called Montana's for the recipe....they say it comes pre-mixed....

I loooove Montana's corn bread too. I would start with using buttermilk instead of regular milk it should give it a more cake-y constistancy. Also your recipe calls for a lot of baking powder as a levener maybe try using a smaller amount baking soda instead? Plus if you make your own buttermilk ( milk with lemon juice or vinegar) the acidity might react with the baking soda to puff it up some more.
